  1. Prepare the non-alcoholic hot base first.
  2. Remove it from vigorous heat before adding Scotch.
  3. Stir in the measured Scotch and sweetener.
  4. Taste before adding more sweetness or spice and serve warm.

Choosing the Scotch

Blended or mellow single malt is a sensible starting point. Choose a whisky whose smoke, fruit, oak and sweetness remain in proportion to the other ingredients. An expensive or rare bottle is rarely necessary when heat, sugar, dairy or strong mixers will obscure fine differences between bottlings.
