  1. Build the sauce base and brown ingredients where appropriate.
  2. Move the pan away from an open flame before adding Scotch.
  3. Return to moderate heat and reduce as the recipe requires.
  4. Add dairy or finishing ingredients after the initial reduction and season after tasting.

Choosing the Scotch

Earthy or sherried Scotch is a sensible starting point. Choose a whisky whose smoke, fruit, oak and sweetness remain in proportion to the other ingredients. An expensive or rare bottle is rarely necessary when heat, sugar, dairy or strong mixers will obscure fine differences between bottlings.
