How spirit cuts shape malt whisky before maturation

A malt distiller does not normally collect the entire spirit-still run as new make for cask filling. The run changes continuously as compounds emerge in different proportions. The distiller separates early, middle and late fractions and keeps a selected middle portion as the spirit cut.

The spirit still receives low wines and recycled fractions

After the first distillation, the wash still produces low wines rather than finished whisky. At many malt distilleries, low wines are combined with appropriate earlier and later fractions from previous spirit runs and redistilled in the spirit still.

The exact operating arrangement varies by distillery, but the principle is the same: the second distillation concentrates alcohol and allows the distiller to select a defined fraction for maturation.

Foreshots arrive first

The early part of a spirit run is commonly called foreshots or heads. It contains a different balance of volatile compounds from the desired middle cut and is diverted away from the spirit receiver.

Foreshots are not simply thrown away in a normal production cycle. They are commonly recycled into a later distillation together with feints.

The middle cut becomes new make

At a chosen point, the flow is directed into the spirit receiver. This middle fraction is the new-make spirit intended for cask filling after any required handling or reduction.

Cut timing matters because moving the start point earlier or later changes the compound profile entering the receiver. A narrow cut and a broad cut do not capture the same balance of volatile and heavier material.

Feints come later

As the spirit run progresses, alcoholic strength falls and the chemical balance changes. The distiller eventually redirects the flow away from the spirit receiver into the feints receiver.

Feints can contain heavier and less immediately desirable compounds, but they also contain recoverable alcohol and are usually returned to a later spirit charge rather than discarded.

Cut points work with still shape and reflux

A cut point cannot be interpreted in isolation. Still geometry, charge strength, heating rate, condenser design and reflux all influence what reaches the spirit safe at a given moment.

This is why copying one distillery’s cut time would not reproduce its spirit on a different still system.

Maturation transforms the selected spirit

The spirit cut defines the material entering oak, but it is not the finished flavour. Years of extraction, oxidation, evaporation and chemical reaction in the cask change the profile substantially.
